Tropical Coconut Bread: A Deliciously Sweet Treat

 Preheat oven to 350°F (175°C) and grease a loaf pan.

In a bowl, whisk together 2 cups of all-purpose flour, 1 cup of shredded coconut, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.

In a separate bowl, mix 1 cup of granulated sugar, 1/2 cup of melted butter, 2 large eggs, and 1 teaspoon of vanilla extract.

 Gradually add the dry ingredients to the wet mixture, alternating with 1 cup of coconut milk, until well combined.

Fold in an additional 1/2 cup of shredded coconut for texture.

Pour the batter into the prepared loaf pan and spread it evenly.

Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Let the coconut bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
