Quick and Easy Pad Thai Recipe
Soak Noodles: Soak 8 oz rice noodles in warm water for 20-30 minutes, then drain.
Make Sauce: Mix 2 tbsp tamarind paste, 3 tbsp fish sauce, 1 tbsp soy sauce, and 1 tbsp brown sugar.
Cook Protein: Sauté 1 lb shrimp or sliced chicken in 1 tbsp vegetable oil until cooked. Set aside.
Cook Garlic: In the same pan, heat 1 tbsp oil and sauté 3 minced garlic cloves for 30 seconds.
Cook Eggs: Push garlic aside, scramble 2 eggs until set.
Combine: Add noodles and sauce to the pan, toss well. Add shrimp/chicken, 1 cup bean sprouts, and 2 chopped green onions. Toss to combine.
Garnish: Serve with chopped peanuts and lime wedges.
