Flavorful Vegetarian Air Fryer Stuffed Peppers

Halve and deseed 4 bell peppers, then brush with olive oil.

In a skillet, sauté 1 diced onion and 2 minced garlic cloves until soft.

 Add 1 cup of cooked quinoa, 1 can of black beans (drained), 1 cup of corn, and 1 diced tomato to the skillet.

 Season with chili powder, cumin, salt, and pepper to taste.

Stuff the pepper halves with the quinoa mixture.

 Place stuffed peppers in the air fryer basket.

Air fry at 375°F (190°C) for 15-20 minutes until peppers are tender.

 Serve hot, garnished with chopped cilantro and a dollop of sour cream, if desired.
