Vibrant Beet Borscht: A Taste of Tradition.
Ingredients: Gather 3 medium beets, 1 large onion, 2 carrots, 2 potatoes, 1/4 head of cabbage, 3 cups beef or vegetable broth, 2 tbsp tomato paste, 1 tbsp vinegar, salt, and pepper.
Prepare Vegetables: Peel and grate beets and carrots. Chop onions, potatoes, and cabbage.
Cook Beets: In a large pot, bring the broth to a boil. Add beets and cook for 10 minutes.
Sauté Vegetables: In a separate pan, sauté onions and carrots in oil until soft. Add tomato paste and cook for another 5 minutes.
